Sunny Days Sangria

Just a quick post on my recent obsession. Since the weather has been so great, we've been sitting on the deck in the evenings and well, drinking! Today and this weekend were especially perfect.

My husband had just mowed the lawn, I had just weeded the entire vegetable garden, and we were cooling down. This sangria has oranges, lemons, and a tiny bit of ginger ale.

I made lamb burger sliders for dinner, that spinach & purple kale salad is my newest crop!

Tonight we had white wine with pomegranate seltzer and blueberries tossed in for good measure!

For dinner we had this. It's amazing and tonight I made it with leftover pulled pork, black beans, tomatoes, salsa and a little sharp cheddar. Try it, you won't be disappointed! You can easily make it vegetarian as well.

Here's to the (almost) weekend; I'm planning on hitting up The Flying Apron!

St. Patrick's Day 'get up and go' Smoothie

Happy St. Patrick's Day!

I am indeed half Irish, so I certainly can relate to the merriment and pride of this day. To celebrate, we're having some friends over for corned beef (in the slow cooker!), sweet potato fries, Guinness, and some green ice cream! I had grand plans of making whiskey chocolate bundt cake, but I got a little sidetracked with the St. Patrick's Day Dash 2013. I started doing this race last year and think I'll stick with it! It was a beautiful sunny day in Seattle, which is quite rare for March and we had an amazing brunch after at Cal's. If you haven't headed to the new foodie scene in South Lake Union, you're seriously missing out! We've already hit up Cactus, so our next venture will be Tom Douglas' new Bravehorse Tavern.

Anyways, enough with this rambling. I recently concocted the most delicious smoothie. It's dreamy. All you need is the green (to make it Irish... and extra healthy) and the rest of the ingredients you can vary. I've made a tropical variation and a straight banana and spinach version. While it is certainly perfect for St. Patrick's Day, it is also fitting for breakfast, lunch, or a post workout snack.

One thing is not to forget is to freeze your bananas, people, freeze them! As soon as I pick them up from Top Banana or the Ballard Market, I usually take about half and break them all into bite sized pieces. You can use them for banana peanut butter ice cream or throw them in a smoothie, like here. Try it, you won't be disappointed.

Ingredients:

2 large handfuls fresh baby spinach
2 c. soy or coconut milk (I prefer coconut)
1 large frozen banana (cut into chunks pre-freezing)
1/2 c. Greek yogurt
1 1/2 c. frozen berries of your choice
1/2 of a ripe mango
Juice from 1 large orange
Sprinkle of powdered ginger
Any other ingredients, such as almonds, oats, or grapefruit juice

Method:

First, grab your handy dandy blender (I've had mine since college, and I treasure it!). Then dump your milk in first, followed by the other ingredients. Blend. If you have difficulty reaching the correct consistency, add more liquids or more solids (bananas or spinach.) Drink.

Don't be surprised you experience a productive work day, followed by a exhilarating workout. All the vitamins and antioxidants flooding your body will get you through any rough day, I promise. I've found that I don't need coffee on the mornings I have this for breakfast. It's that impressive.

Also pictured here is some Ezekiel bread topped with homemade almond butter (recipe to follow soon!) As you can guess, it was a productive day.

Cheers to your St. Patrick's Day and the morning after!

Happy Friday everyone!

We're headed Over the Mountains and Through the Woods to my baby nephew's First Birthday Extravaganza! I can't wait... and I'm making this and these. Whooppee! Is there anything better than a First Birthday Party? Other then, well, your wedding day ;)

Delancey & Essex

I've talked about my obsession with Ballard, pizza, good food, and the blog Orangette before. And coincidentally, I am reading A Homemade Life, and loving it so much. But, a few weekends ago, we were lucky enough to have a quick trip to Seattle before a family Labor Day get together. And...we went to Delancey. We got to meet up with my very dear friend Sarah, who I keep around mostly in case I get into trouble and I need an attorney to back me up. Really, it's true. I have some pretty cool friends, and like I tell her, she's one of the Top 5 Coolest Friends of mine. In addition, she has been known to make certain people delicious carrot cake for their birthdays, too.

This is a rather old picture of Sarah and I. Technically she was my "boss" when this picture was taken, but believe me, our friendship runs much deeper than our love for legal research.

Anyways, it just so happens that even though she assists with cooking classes at The Pantry, next door to Delancey, Sarah and her boyfriend, had only experienced Delancey pizza one other time! Since they are such fabulous and supportive friends, they satisfied our (okay, my) burning desire to check out the restaurant and the new bar, Essex, that just opened. That's right, we went to a buzzed about bar shortly after it just opened its doors. And, it was featured in the Seattle Times. So we put on our party hats and headed out to Ballard, our old stomping grounds. Luckily, we had an hour wait ahead of us at Delancey, so we headed over to Essex. And wow, was it neat. The cocktail list was concise, but complex. I ordered a cocktail carefully crafted with elderflower and herbs and Sarah tried a light breezy citrus beverage. Our significant others ordered cocktails too, but clearly I was too enamored with mine to remember what they were.

Mine is the pink one with pretty flowers floating in it! Tres chic!

An hour later, we continued on to pizza...

Delicious, just delicious. The environment is simple, yet very Seattle-y, with local art and photography lining the white walls. To be honest, I did not get a lot of pictures of our pizza, because I was too busy consuming it. Pictured above is the bacon onion, a magical combination of pure flavor explosions. We additionally ordered (and finished) a pepperoni, a white pizza, and a mozzarella.

All in all, a wonderful night full of good drink, good friends, and good food. A girl can honestly ask for nothing more. Go visit Delancey, and have a night you won't forget.

Ciao,

k

Sangria

Ah, sangria. That delectable mix of fruit and wine. This sangria is a concoction from who knows where. I think I looked at a recipe a long time ago, which must have been where I got the idea for this particular mixture. However, I consider this my own recipe, because of what I add to it.
Sangria is perfect for those nights when you want a relaxing drink, but you don’t want a cocktail, and you don’t want wine. (I know, hard to imagine a night where you wouldn’t want one of either.)

This recipe has been popular in particular with my father, who has been known to run out to the store and return with about 3 bottles of wine, just so I could make more. It’s pretty good, I’m not going to lie to you. I have yet to try making white sangria, which sounds just as delicious and refreshing. When I do, I’ll let you know.

Ingredients:

Makes 4-5 glasses
4 c. of red wine, I use Rex Goliath “Free Range Red”, because it’s inexpensive and it’s a basic red wine.
1-1 1/2 c. ginger ale
1 lemon, sliced
1 lime, sliced, saving one slice for garnish
1 orange, sliced
Optional additions: strawberries or raspberries (or you could go crazy with blueberries!)
2 shots gin (I add more when it’s Friday night)
2 c. ice

Method:

First, it’s a good idea to set your bottle of Rex Goliath in the refrigerator so it can chill. No one likes warm sangria. Then, add wine and juices from your squeezed lemon, orange, and lime. Top off with ginger ale.
Give it a good stir, add the ice cubes, and let chill in your refrigerator (if you can resist) for about 15 minutes.

Enjoy on a warm summer night with friends & family!

Urban Family Public House

About a week or so ago, the husband, pup, and I went to Seattle to see my family and spend some time in the (rare) Seattle sunshine. We went to the Ballard Farmer’s Market, a plethora of fresh produce, handmade jewelry, talented street musicians, and just about anything you would want to see.
The Ballard Farmer’s Market is the quintessential example of why I love Seattle down to my very core. If a stranger ever asked me for the perfect Sunday morning activity, I would tell them: first, a latte at Caffe Vita and then stroll along the street, past the boutiques, the hotcakes shop, and the antique stores to the farmer’s market. Oh yes, and follow it up with a cupcake.

As we ended our foray into the market, after making about three loops past the Danish pastries, the bunches of vibrant flowers, and the hand crafted necklaces, we stumbled across a chalkboard sign inviting us to eat and relax on a deck… with our dog. Now, I know that Seattle is down with the doggy friends, we’ve been to Norm’s and have wanted to check out Shorty’s in Belltown, if it wasn’t for our mutual fear of the clown decor. But nevertheless, the opportunity to sit back, savor the sunshine, and grab a bite with our four legged friend is something we will not pass up.

And that’s how we found the Urban Family Public House. Snugly tucked in beside Staple & Fancy on Ballard Avenue, the pub was the perfect setting for some quiet conversation, a filling and tasty sandwich, and of course, a cold IPA.  When we ventured in, we asked the bartender (because maybe someone had made a mistake) whether dogs were indeed allowed in. He said “sure, inside, outside, wherever!” Magic to our ears, my friends, magic to our ears.

We promptly ordered two prosciutto paninis, which were accompanied by a cannellini bean salad, a match made in heaven in my opinion. The prosciutto was crisp and salty, the pesto warm and smooth, and the cheese, well I cannot say enough about the cheese.

While we were there, we nodded hello to a few other patrons, also overjoyed to be sitting outside, on a deck, in Seattle. Keep in mind this is not something that happens very frequently. It truly is like Christmas. A sweet middle aged couple sitting next to us were doing exactly the same thing, closing their eyes and munching on their paninis in between sips of an ice cold IPA.  And of course, our dog was there the whole time.

Berry Much in Love Cocktail

As some of you may know, the husband and I celebrated our very first year of marriage this past Monday! We had a glorious weekend of hiking, playing outside, and enjoying each other’s company while cooking together.

The appetizer was one reminiscent of our Italian honeymoon, a basic caprese salad. We ordered it basically at every meal, excluding breakfast, in every city and village we visited on our adventure. It was perfect for the warm spring evening on our deck.

Our main course was a beef pasticcio, we added a copious amount of red wine to the sauce, which cooked the mushrooms to a perfect texture…This heavenly goodness was contained in a 9×13 pan, and it gloriously continued to feed both of us in the next few days. Even though our meal was simple, it was filled with the rustic and fulfilling flavors that we enjoyed on our vacation.

And dessert…well, that goes without saying…our wedding cake top. The entire, blessed top of our cake made by the most wonderful pastry chef I’ve ever dreamed of.  In case you were wondering, yes, our wedding came together quite perfectly, and our cake is only one of the shining testaments to this.

Of course, what meal would be complete without beverages. I’d been itching to use our cocktail shaker and this occasion certainly called for it! The end result of my concoction is raspberry goodness, not only does it taste divine, it looks purdy too. Trust me, they’ll have a second one.

Ingredients (makes 2 cocktails):

1/3 c. fresh raspberries, rinsed and dried
1 tbsp. light brown sugar
1 tbsp. fresh lime juice
Gin
1/2 c. ginger ale
Ice cubes
A few extra raspberries for garnish
Place 1/3 c. raspberries in cocktail shaker, add lime juice and sugar. Mash and muddle violently on the bottom with a spoon or some sort of kitchen tool, preferably a pestle.

Once all the ingredients are combined, include about 3-4 ice cubes into the mixer, tighten the top, and shake. The shaker will begin to chill on the outside; continue shaking until the inside looks like a syrupy raspberry jam. Then, add the gin, about 2 – 2 1/2 shot glasses worth.

Shake for about 30 seconds. Add a few extra ice cubes and a 1/4 cup of ginger ale , to each cocktail glass, and carefully pour the raspberry goodness into the glasses. Garnish the glasses with a few extra raspberries and give to someone you love.

Cheers!
Kathleen
